A 4-day weekend is actually really long. The good thing is that I got to spend a lot of my time catching up with friends since they were on holidays as well. I got pretty bored of going out to eat all the time, so a couple of girlfriends and I gathered to BAKE!!

So random, I swear. But it was a nice switch from the usual get up and dress up. This was a more relaxed thing, eating and talking our hearts out in our own privacy.

We baked chocolate brownies that were so yummy, my eyeballs rolled off. You guys should try this recipe, although it’s not very different from other brownie recipes I’ve seen. I wish I can say that the ingredients were 3 amazing girlfriends, 3 spoonful of cheeriness and a whole cup of laughter. But cheesiness won’t get you brownies. So the real recipe….



Double Chocolate Brownie Tart with Walnut Crust

(we didn’t use walnuts or chocolate chips, so it was just plain brownies for us…but I’ll include the full recipe anyway)

For the base:

150 g digestive biscuits

150 g walnuts

125 g unsalted butter, melted

Crush biscuits and walnuts together. Stir into melted butter. Press into cake tin and chill in the fridge for 20 minutes to set the base.

For the brownie:

125 g dark chocolate, broken into smaller pieces

175 g unsalted butter, softened

400 g caster sugar

3 large eggs

1 teaspoon vanilla extract

150 g plain flour

200 g white chocolate chips

Preheat oven to 180 degrees C.

Melt chocolate gently in a hot water bath. While waiting, mix butter and sugar. When it’s white and fluffy, beat in the eggs. Add the melted chocolate and vanilla extract. Fold in the flour, then half the choc chips. Spoon into biscuit case and spread nicely. Sprinkle the remaining choc cips on top.

Bake for 35 mins (but we took longer for some reason…)

Granted, it’s not the prettiest thing in the world. But you know what they say; The sloppiest things are the yummiest things.

Ok no one says that.

Whatever, it was so yummy ok.

Even Opah was licking the plate clean.


Oh god….writing this is making me hungry.
